Autumn Apple Bread

¼ C Crisco shortening
3/4 C sugar
2 eggs – beaten
2 C flour
1 teasp baking powder
1 teasp baking soda
1 teasp salt
1 teasp cinnamon or apple spice
2 C coarsely grated peeled raw tart apples
1 teap grated lemon rind
2/3 C walnuts

In medium bowl:
Stir together all the dry ingredients

In medium bowl:
Cream shortening and sugar until light and fluffy
Beat in eggs.

In large bowl:
Add alternately, dry ingredients and grated apple to
egg mixture. Once mixed, stir in lemon rind and nuts

Pour mixture into a greased and floured loaf pan

Bake in 350 degree pre-heated oven 50 –60 minutes
Test for doneness by inserting tooth pick in center,
When comes out clean, apple bread is done

Cool completely before slicing.
