Pineapple Pecan Loaf Cake
Preheat oven to 350 degrees

2 C flour
2 C sugar
2 eggs
1 20 oz can crushed pineapple WITH juice
2 teasp baking soda
½ teasp salt
1 C chopped pecans
(Optional: add ¼ C coconut + 2 Tbs water)

Combine all ingredients and mix well.
Bake in greased and floured loaf pan
35 to 40 minutes.
Check for doneness with toothpick inserted
in center; comes out clean if done
