Preheat oven to 350 degrees; grease and flour rectangle cake pan

In a qt size pyrex bowl, mix together and set aside for later use:
1 C regular oats (not instant or quick cook) and 1 ¼ cup boiling water
In a large mixing bowl, mix together:
1 stick margarine or butter – softened
1 C white sugar 1 C brown sugar – packed
2 eggs 1 ½ C flour
2 tsp cinnamon 1 tsp baking soda
½ tsp salt *Optional Ingredients
After above ingredients are mixed together well, then mix in the oat mixture. Pour into the prepared cake pan and bake for 45 minutes at 350 degrees.
*Optional ingredients: 1 C chopped walnuts, 1 C chopped pecans, 1 C dried cut cranberries.

In a small sauce pan, mix together 1 C powdered sugar and all the juice of 1 orange (or 1/3 C of orange juice). Bring to boil and immediately pour over cooked cake as soon as it is taken out of the oven.
Cool an hour or more before serving. To make it fancy, serve with a dollop of whipped cream and a touch of orange zest.

This cake is delicious and brings fond memories of our family holiday gatherings when I was growing up. A leftover piece with a cup of coffee the next morning was a delight!
